2021 Grand Reserve Cabernet Shiraz

2021 was the first year of a La Niña cycle - cold, wet and long. Heavy rainfall in spring following a full soil recovery program through 2020 as the drought broke left the vines in fantastic condition for a slow and steady ripening season. The reds from 2021 are elegant and complex, while the whites are aromatic and lifted.

20/03/21 - 2T Cabernet Sauvignon and 2.2T of Shiraz from Blocks 3A and 1 respectively at 13.4Bé. Cold soaked for three days, followed by seven days on skins. Pressed at 3.5Bé and straight into oak (25% new, all American). Dried in barrel to -1.0Bé over the next two weeks. 17 months in oak, bottled on 14/10/2022 at 14.15% alc/vol.
