2021 Estate Cabernet Sauvignon

2021 was cold and wet, breaking a 5 year drought cycle. Heavy rainfall and cool temperatures helped restore vine health and balance. Ripening was slow and steady. Harvest was late, with the cabernet ripening in perfect autumn temperatures. The wines are elegant and complex.

10 tonnes was harvested on 19/3/21 at 12.8 Bé. Berries were small and intensely flavoured. The fruit spent 9 days on skins, was pressed off and then into barrel (mainly seasoned French oak) for 17 months. Bottled 24/10/22 at 14% alc/vol.
