2019 Cabernet Sauvignon

2019 was the last of the recent drought years. The vines (and vigneron) were hot and tired. The canopy was modest but enough to shiled the grpaes from the sun and provide the fuel needed to ripen. Plentiful irrigation, organic nutrition plus several years of investment in soil health and sustainability got them through. Tim needed every bit of his experience and skill to bring the best out of this tough season. He has quite the track record of making great cabernet in hot years, flying in the face of perceived wisdom about the variety.

4.3 T of fruit was received from Block 9a on 04/03/19 at 13.9 Bé, fermented on skins for 7 days. Matured in a mix of seasoned French and American oak for 18 months. Bottled at 13.6% alc/vol.
