Since our Trophy at the NSW Small Winemaker's show in 2015, I've been looking for a parcel of Traminer fruit I liked as much. I got my hands on a couple of tons of beautiful grapes from our neighbours who dodged the frost. The grape's spiritual home is the Alsace region, and I love the spice and aromatics of these wines. They pack a real punch in terms of flavour, have a beautiful texture, and are just something a bit different. The sweetness of this wine was the subject of heated debate in the team - bone-dry beat slightly off-dry. This time!
Winemaking
1.97T received 3/02/25 at 11.2 Baume. Lightest of touches with the press to ensure gentle extraction, purity of flavour and aromatic vibrancy. Juice was settled and racked to stainless steel on 6/02. Fermentation took place over 12 days proceeding cleanly and evenly. Wine fully dry at -0.9Be. Bottled 7/05 at 11.26% alc/vol.
