We’ve been making Méthode Trad since 2008, though we’ve had a brief hiatus this last few years. Over the years it became a hugely popular and eagerly awaited summer release. We're back with a bang! Secondary fermentation in bottle with over 18 months on lees (Traditionnelle) has contributed complexity and a lovely biscuity character, as well as the fine bead that gives a unique texture.
Vineyard
0.85T of fruit from Block 12 Pinot Noir (52-year-old vines, 509M altitude), and 0.92T from Block 16 Chardonnay (45-year-old vines, 504 M) were picked 17/02/24.
Winemaking
Crushed and pressed, cooling on, at 10.8 Baumé. Racked to ST.8 on 23rd January. Slow, steady ferment over 5 days down to dry. Filtered on 20th March, before bottling and inoculation for secondary fermentation in bottle to commence. It spent 18 months on lees, with dosage trials in August and the wine disgorged in early October. The finished wine is 12.35% alc/vol, Extra Brut. 1200 bottles made.
