Fruit from Block 5 Semillon was left on the vine to ripen and rot (nobly of course!). 10T worth of table wine grapes left on the vine to shrivel to approx 1T in weight as they ripened to 24 baumé, yielding around 800L of unappealing looking thick brown juice. The miracle of wine-making transforms this unpromising juice into the nectar of the gods. Add nearly 4 years of bottle age and there’s something very special in the bottle as this wine begins its long, slow journey to develop in bottle!
